Old-Fashion Recipe for the Best Deviled Eggs

  • 1 dozen eggs (large)
  • 1/3 cup mayo
  • 2 tablespoons mustard
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper (adjust to taste)
  • Paprika or (smoked paprika) for garnish
  1. Boil the eggs: Place the eggs in a single layer in a saucepan. Cover with water, bring to a boil, then simmer for about 12 minutes ( for perfect eggs). Transfer the hard-boiled eggs to an ice water bath to cool before peeling.
  2. Peel and halve the eggs: Gently peel the eggs. Then cut the eggs in half lengthwise, removing the yolks to a separate bowl.
  3. Make the filling: Mash the yolks with a fork. Add the mayonnaise, Dijon, or yellow mustard, dill or sweet pickle relish, and a dash of salt and pepper. Mash until smooth.
  4. Fill the egg whites: Use a small spoon or a piping bag to add the yolk mixture back into the egg white halves.
  5. Garnish: Place them on a serving platter and give them a sprinkle of paprika.

If you’re serving them as a snack or as the main side dish, you can count on serving 2-3 deviled eggs per serving.

Do fresh eggs make a difference?

This may come as a shock, but eggs that are about 7 days old make better boiled eggs than same day farm-fresh eggs. Eggs that are several days old peel easy, turning loose from the shell much smoother after taking a plunge in an ice bath.

How long are stuffed eggs good in the refrigerator?

This mostly depends on the ingredients that are in the filling. On average, they’ll be good for a couple of days, though they’re always best when freshly prepared.

The ones with bacon look the best to me. Yum! Luckily I love boiled eggs. I’m eating the as they are for breakfast and snacks. I’m not tired of them yet!
