Why not surprise the kids with a fun breakfast?! Waking up will be easy when you're serving these easy Rainbow Pancakes. They make a great St. Patrick's Day recipe too!

Our family has always had a crazy schedule and it used to bother me that we didn’t get to enjoy family meals very often. After awhile I started looking at it differently though.  Since we can’t spend all our meals together, we make the most of the ones we do have, whether it’s breakfast or dinner.

That doesn’t mean I want to spend a lot of time making those meals though. I’m not a morning person so I need something easy…and that’s AFTER I get my coffee!  Sometimes I even have make ahead meals ready, like this yummy breakfast casserole or these egg muffins with sausage and cheddar.

If I don’t have anything ready to go, I love making these easy rainbow pancakes! I have to admit, sometimes I cheat and use store bought pancake mix. It makes life easy and my family can’t even tell the difference. The kids can even grab a whisk and jump in to help!

How To Make Rainbow Pancakes

You don’t even need many ingredients…just some milk, eggs, pancake mix and a little oil. Then you’ll just need a little food coloring and you’re good to go.

Mix your ingredients in a large bowl.

Next, divide into four smaller bowls, add food coloring and stir.

My kids were SO impressed with these rainbow pancakes and I got the best mom award, at least for the day!

Drizzled with plenty of syrup, these are so good for a family breakfast or even brunch!

Is there anything better in the morning that freshly made pancakes? Yumm!

Not only are these easy rainbow pancakes tasty, they're pretty to look at

Top with a little butter and drizzle plenty of syrup over the top! If you really want to get fancy, this homemade blueberry syrup is to die for!!!

When you serve these easy rainbow pancakes, there won't be a lot left over

Easy Rainbow Pancakes

Make breakfast special with these fun rainbow pancakes! 

Ingredients
 

  • 2 cups pancake mix
  • 1 1/2 cups milk
  • 2 tbsp. oil
  • 2 eggs
  • food coloring red, blue, yellow, green

Instructions

  • Heat skillet over medium-low heat (if using electric griddle, heat to 375)
  • Combine all ingredients except food coloring and stir until lumps disappear
  • Divide into four bowls (more if using additional colors)
  • Add a generous amount of food coloring to each bowl and stir
  • Pour slightly less than 1/4 cup of batter per pancake and turn when pancakes start to bubble
