I’m so excited to report that the challenge continues to be a success! I think I’m actually getting this whole meal plan thing down, though I probably would have doubted you if you told me that 10 weeks ago! This will be my last official “challenge” report but I’ll continue to share delicious recipes that I’ve found or created each week so we can keep meal planning together. Here’s this week’s report…
I made these meals this week and they were absolutely delicious! The tenderloin took a little prep time but it was well worth it. The garlic chicken really was easy so if you ever have to throw together a quick dinner, this is perfect.

The Grocery Store:
I was successful again, making only one trip to the grocery store! This week might be a little trickier but I’m going to do my best to make it happen. Instead of shopping Sunday, I went several days early since my parents were coming to town. That means there will be 10 days instead of a week between shopping trips but I think I have enough to get us through.
Woohoo! I was under budget AGAIN this week…I’m on a roll! I spent $116.40, shaving $8.60 from my budget! Staying within my budget has been the most difficult part of the challenge so I’m feeling pretty good about this. I also think I started too low…$100 a week just didn’t cut it. I think I’ll stick with $125 though…it’s definitely doable!
Now For This Week’s Menu:
Lemon Chicken Piccata from Jo Cooks
Slow Cooker Chicken Fajita Soup from The Recipe Critic
Sweet & Spicy Asian Salmon with Blueberry Pineapple Salsa from Carlsbad Cravings
Bacon Wrapped Pineapple Turkey Burgers from Pepperscraps
Lasagna Cups from Fun Money Mom (I couldn’t resist adding my own recipe…they were so yummy)
Slow Cooker Creamy Portobella Chicken from Homemaking Hacks
If you’re still hungry, you can head over to the Nestle Tollhouse Pinterest Page for some awesome dessert ideas! I’m loving this No-bake White Chocolate & Lemon Cheesecake…so yummy!
