Welcome back! It’s time for another Meal Plan Monday Challenge. I was on easy street this past week because we only had one family meal together (due to hubby’s work schedule). I guess I’m lucky and unlucky at the same time because I’d love to have more time with hubby but it’s definitely nice not having to cook a full meal every night. Cooking for just the kids is so much easier (they’d be perfectly happy if I just put the same thing in front of them every night)!
Anyway, here’s how the challenge went this week:
Well, this was pretty simple to achieve since I only had to cook one full meal. I chose to try another slow cooker recipe and went with this Lemon Garlic Chicken from No. 2 Pencil. I added some roasted potatoes and spinach salad. The chicken was good but the recommended time of 4 hours on high was a bit too long and it came out on the dry side. I totally forgot about the probe feature that came with my slow cooker (still learning!) and I think it would have turned out fine if I had used that. Don’t get me wrong, it was still good…just not as juicy as I would have liked.
The Grocery Store:
This has been the easiest for me throughout the challenge and I passed this challenge with one exception. There was a chance that Hurricane Erika was heading our way (though I think we’ve dodged the bullet) so my husband suggested that I go to the store to pick up some bottled water and a few canned goods, just in case. Isn’t that what you do when preparing for a natural disaster??? I also bought some extra milk and wine (you know, the necessities) but overall, I think I can consider this a success (because Erika made me do it).
Wow…I’m still struggling with this part. Though I upped the budget to $125, I still spent $147.05, putting me over budget by $22.05. Though it’s not a crazy amount, it’s still more than I planned to spend so this part is a fail once again. I guess there’s always next week, right?
