So this week I’m focusing on healthy recipes, mainly because I’m going on a diet! Yes, I’m hoping to lose 10 pounds in the next three weeks with the slow carb diet. It’s not a fun one…not only do I have to give up carbs (my favorite food group), I have to cut out all dairy and fruit too. This means…gasp…no cheese and crackers but at least wine is still allowed. It’s really hard for me to give these things up but three weeks should go by fast, if it even takes that long.
This is my favorite diet because not only did I use it to lose all the baby weight after my youngest was born, I actually weighed less than I did before I got pregnant. The weight stayed off but then we moved to Florida and I got lazy about watching my calories (let’s just say that they know us well at Menchies). I’ve gained about 7 pounds in the last year and just to make it easy, I’m making 10 my goal. That way I have a little wiggle room for all the holiday goodies! If you want to join me, there are lots of great books about the slow carb diet. However, I got most of my info just by googling.
Anyway, on to the food! We tried an awesome new recipe this week. My hubby isn’t a big cilantro fan but even he loved this Cilantro Lime Grilled Chicken from Chef In Training! It was absolutely delicious…definitely something we’re adding to our rotation!
I may have to tweak some of these a little but otherwise they fit into my diet pretty easily. I thought these all looked pretty yummy!!!
