How To Make A Disney Princess Castle Cake

You don’t have to be a professional baker to make this Disney Princess Castle Cake! It’s a fun birthday cake that any little princess will love!

When my oldest was turning 4, she decided she wanted a Disney princess party. I took her to the grocery store to pick out a cake but when she showed me the one she wanted, I had sticker shock. I hadn’t bought a birthday cake in a long time and couldn’t believe that one little cake could be $60!
I’d never made a castle cake in my life but I insisted to my daughter that mommy could make a better one. She even fell for it…now I had to actually do it!
I went to Pinterest but it seemed like a lot of the Disney princess cakes were over the top and way too complicated for me, an inexperienced, non-Martha Stewart type of mom. What I needed was an easy castle cake. In the end, I pieced together a bunch of smaller ideas from various cakes and put together my own creation, which didn’t turn out too bad considering it was my first ever cake.
Fast forward a few years and that same little girl is turning 8. What’s more, she wants the same super expensive store-bought castle cake. It took a little more convincing this time but she finally agreed to let me bake another castle cake for her.
If I can do this, so can you and even if you’re a non-Martha Stewart mom, all you have to do is follow this easy castle cake tutorial. You’ve totally got this!
While it’s fairly easy to make, this cake does take a bit of time to put together so I recommend putting it together over a couple days. The ice cream cone towers can be prepped a day or two before you begin the rest of the cake.
How To Make A Castle Cake
To start, you’ll need 9 regular ice cream cones and 5 sugar cones. Frost the regular cones but leave the bottom unfrosted for now. Then frost the sugar cones and sprinkle on whatever décor you’d like to use…we chose pink sprinkles. Store them in the refrigerator until you’re ready to assemble the cake.

Bake your cakes the day before the party since building a castle takes some time. Using boxed cake mixes, I baked four in all…two 8″ rounds and two 9×13 rectangular. I used white frosting but of course you can use whatever color you want to add your own special touch. My thought was that the accents would stand out more against the white frosting.
Before you put your cakes together, you’ll need to level them. I highly recommend an inexpensive cake leveler just because it’s so much easier than a knife. Don’t worry if the corners are a little uneven because you’ll be cutting them off to add the towers anyway.
Place one 9×13 cake, leveled side down, on whatever platter you plan to use. If you don’t have a platter big enough, you can do what I did and use a cardboard cake board. Frost the top of the cake and place the second 9×13 cake on top of it, leveled side down again. Now you can frost the entire cake.
Once you’ve leveled the round cakes, you’re ready to put them all together. You may want to use a cardboard round (it makes serving much easier) but you don’t have to. If you do have one, put it in the middle of the large cake. Place the first round cake in the center, leveled side down and then frost the top. Add the second round cake on top of it, also leveled side down. Now you are ready to frost. Don’t worry if it’s not perfect because you can always go back later and add more icing. Adding icing pretty much fixes any mistake.
Now it’s time to add the towers. Start by cutting off a small part of each corner (these pieces make a good little snack!). Since the bottom of the cone is wider, you’ll want to cut a little deeper into the bottom of the cake. Push the tower into the cake. You may have to experiment a little to get it just right. If you have a small gap, don’t worry about it. You can use icing to fill it in…it helps keep the tower better attached anyway.
Ice the flat top of the cone, place another one on top and smooth out the sides where the icing oozes out. Now ice the inside of the top cone and place the sugar cone upside down inside it.
Cut a hole in the top of the round cake to hold your last tower. It doesn’t matter if you don’t cut it to exact size…this is another instance where you can just fill in the gaps with icing. Don’t forget to ice the inside of the regular cone to hold the sugar cone in place. I cut my hole towards the back of the cake so I’d have room for a Happy Birthday message but you can also put it in the middle…whatever works best for your own design.
Now it’s time to decorate your castle! Use pink icing to trim the cake. The towers needed some marshmallows and yellow fondant was perfect for making the windows and a door. After making vines with icing, I added candy flowers. Finally, I added some extra pink blossoms because a princess castle can never have too many flowers, right?
I took shredded coconut and mixed it with green food coloring to make it look like grass. Now it was time to show the princesses to their new home. They look pretty happy, don’t you think?
Though it might take a little time, this is an easy castle cake that anybody can make. Seriously, if I can do it, so can you!
My picky eight year old was very happy with the way it turned out. She even told me that it was BETTER than the grocery store cake she’d originally wanted!

Yes! In fact, I made the turrets several days before and kept them in the refrigerator until I was ready to add them to the cake. Then I made the cake the day before as well (way too much to do on the actual day of the party!). Enjoy!
