I am in love with Florida! We moved here almost two years ago and I have no idea why we didn’t do it sooner! What’s not to love? Another great thing about Fresh From Florida, as if that’s not enough, is that I can find great recipes anytime I get stuck trying to come up with something for dinner or entertaining. Now that summer is here, we plan to have friends and family over a lot more often! My family loves cooking out and while my husband works on his perfectly grilled chicken, we usually enjoy an easy go-to appetizer of peel and eat shrimp with cocktail sauce! You can never go wrong with shrimp, especially Fresh From Florida shrimp…you just have to act fast before my shrimp-lovin’ hubby devours them all! In fact, if you’re a seafood lover, you’ll be in heaven with Fresh From Florida seafood! There are so many different types to choose from and whatever your favorite, you know your seafood will always be fresh and delicious!
Since Memorial Day is coming up, I thought it would be fun to make something with a red, white and blue theme. I picked up some Fresh From Florida watermelon and blueberries, along with a chunk of cheddar cheese and came up with these little snacks…aren’t they pretty? The bonus is that they’re so easy! I used a cookie cutter to make stars from watermelon slices, though you could just as easily use watermelon chunks if you don’t have a cookie cutter on hand. Then I just put the watermelon, blueberries and cheese on “fancy” red and blue toothpicks and I had an easy appetizer ready to go. Let’s just say they didn’t last long!
