I love living in Florida! When we had the opportunity to move here not long ago, we didn’t even blink….we jumped at the chance! We couldn’t wait to live in the land of sunshine and palm trees! We thought we’d miss our family and friends but the great thing about living in Florida is that everyone wants to visit! Plus, now we often see other family members that we haven’t seen in years! It’s been great all the way around.
Of course, having visitors means stocking up on food…you always want to have something tasty on hand to serve your guests! I love pouring the wine and serving delicious appetizers. However, I don’t want to spend all my time in the kitchen making those apps when I can be socializing instead! That’s why I love crostini. It’s so easy to make and you can top it with whatever you happen to have on hand. My latest favorite is a delicious crostini with sausage, goat cheese and peppers. What really makes this crostini different is the unique, bold flavor of the Jack Link’s Wild Side Sausage! No boring, flavorless sausage here! I recently discovered Jack Link’s Wild Side Sausage at my local Walmart and since they’re on sale for just $3.48 through Memorial Day, I decided to stock up. While some sausages can be rather bland, I really love the bold flavor of these! Not only that, they’re made with premium cuts of beef and pork, are high in protein, have no fillers or added MSG and are gluten free.
I bought the Jack Link’s Wild Side Sausages Original Flavor this time but I want to try the Jalapeno and Cheddar flavors next! They are perfect for crostini but I think they’d be great to toss on the grill too! Want to try some for yourself? Just head to Walmart and look for them where the refrigerated sausages and hot dogs are found.
I love that this recipes requires so few ingredients! Other than the sausage, I just needed a baguette, goat cheese and two bell peppers. You could probably make due with one pepper but I liked the look of the two different colors…you could even use three colors if you really wanted to go all out.
The first step is to slice the baguette diagonally, brush both sides of the soon-to-be-crostini with olive oil and bake in the oven, turning halfway through.
While the bread is baking, you can begin to julienne your peppers. Sautée them in olive oil until slightly tender and set aside.
Finally, prepare the Jack Link’s Wild Side Sausage. Since it comes precooked, I microwaved it for about a minute and, voila, it was ready…so easy! Slice the sausage diagonally, just as you did with the baguette.
Now you are ready to assemble your mouthwatering crostini! Start by placing a small amount of goat cheese on the bread (it keeps the sausage in place). Next, add a piece of sausage followed by goat cheese. If you really want to make it look nice, you can use cake decorating tips for the goat cheese. Otherwise, just spread it with a knife…I promise it will still be delicious either way. Finally, top with the peppers and if you’d like, add salt and pepper to taste.
Note: To shorten the preparation time, slice and bake the bread up to a day ahead of time and store it in an airtight plastic bag until you’re ready to use it. You can julienne the peppers in advance and store them in a plastic bag as well.
Now you’re ready to serve your fabulous appetizer, pour a glass of wine and socialize with your guests!

- 4 Jack Link's Wild Side Sausages
- 6 oz. goat cheese
- 2 bell peppers
- 1 baguette
- olive oil
- salt & pepper to taste
- Preheat oven to 375
- Cut baguette into thin diagonal slices and place on cookie sheet
- Brush both sides of the bread with olive oil
- Place in oven for 5 minutes, turn and back another 7 minutes
- Cut peppers into small strips (julienne style) and sautee with olive oil until tender
- Set aside
- Microwave the sausage according to directions on package
- Cut into thin diagonal slices
- Now you're ready to assemble:
- Place a small dallop of goat cheese on the crostini (this will keep the sausage in place)
- Add sausage
- Add goat cheese (I used a cake decorating tip because I like the effect but you can spread it with a knife if you prefer)
- Top with peppers
- Sprinkle with salt & pepper to taste
