I recently took a temporary teaching job and I absolutely loved the teachers I worked with. When it was time to go, I wanted to do something special to say thanks…thanks for all the help, for making me feel right at home and for just being so much fun to work with! Since St. Patrick’s Day is right around the corner, I thought it would be fun to make chocolate covered pretzels with a rainbow theme. Here’s what you’ll need:
Chocolate chips (I used white chocolate and dark chocolate)
Candy melts (either a variety of colors or buy white and use food coloring)
Sprinkles (rainbow colored & gold)
Wax or parchment paper
Dark Chocolate Rainbow Pretzels:
Melt your dark chocolate chips. I melted mine in the microwave, stirring every 30 seconds. Then I poured the chocolate into a tall thin glass, dipped 3-4 pretzels making sure that they were evenly covered, then placed the pretzels on wax paper. Finally I added the rainbow sprinkles. See, didn’t I tell you it was super easy? (note: I only did a few at a time because I didn’t want the chocolate to start setting before I added the sprinkles…otherwise they’re not going to stick)
End Of The Rainbow White Chocolate Pretzels:
These took a little more work but were still pretty easy. First, cover the pretzels with chocolate using the same steps above (melt in microwave, dip in chocolate, place on wax paper). Then you’ll want to get a small plastic baggie and cut a very small tip off the corner. Melt your candy melts, again stirring every 30 seconds, and spoon into the plastic bag when completely melted.
Start by testing it on wax paper to get the effect you want. I made the hole too big with the first cut and the candy came out really thick. I made a smaller cut at the other end of the bag and this time it came out just right.
Make the candy bags one at a time, starting with red. Add red swirls of color to each of the pretzels, followed by orange, yellow, green, blue and violet. I skipped indigo because honestly, there were no indigo candy melts (I’m pretty sure nobody noticed anyway). When that step is finished, spread a little more white chocolate at the base of the “rainbow” and sprinkle on your gold. Finally, put all the pretzels in the refrigerator for about an hour so the chocolate can set.
I also created some cute printables to go along with my gifts. Just print out whichever ones work best for you and attach to the gift bag. You can choose from Thanks A Million, I’m Lucky To Have You, Happy St. Patrick’s Day or a combination of all three messages.
Finally add some chocolate coins, tie the bags with some colorful ribbons and your treats are ready to deliver. Don’t forget to save a couple for yourself!
