Ready to get your summer off to a great start? These bite size Ice Cream Sundaes With A S’mores Twist combine the deliciousness of an ice cream sundae with the chocolaty sweetness of s’mores. It doesn’t get much better than this!
How are you kicking off summer? To me, the last day of school officially marks the beginning of summer and every year we celebrate with a big water balloon fight! Of course, we need a fun summer food and what says summer fun more than ice cream?
Our go to is Blue Bunny Ice Cream and it’s always the perfect treat on a hot summer day. In fact, there’s only one thing better and that’s a delicious ice cream sundae. This year I decided to shake things up a little. Instead of regular ice cream sundaes, I’ve made bite size ice cream sundae treats with a s’mores twist.
I had to swing by Walmart first to get my ingredients. First things first, I needed Blue Bunny ice cream. It’s my favorite because it’s a fun-filled ice cream that gives me pure enjoyment. I have to admit, it’s pretty easy to give in to the bunny! I love using it for all my ice cream recipes and while I used Cherry Pickin’ Chocolate for these Chocolate Hearts, this time I wanted to use the Blue Bunny Vanilla as my main ingredient.
Of course, you can’t have ice cream sundae recipes without whipped topping so I also picked up a can of Reddi-wip Original. Made with real cream, I can add a little and enjoy a lot! It tastes great on everything and that extra dollop of fun gives me instant gratification! Both were easy to find…
Since I always find everything I need at Walmart, I picked up my ice cream sundae toppings and the rest of the ingredients while I was there. Now I could get started.
How To Make An Ice Cream Sundae With A S’mores Twist
First you’ll need a graham cracker crust. I crushed graham crackers in the food processor, poured them into a bowl, then added sugar and butter.
Be sure to mix well so the crust will stick together. If not, it may fall apart on you.
Spray a mini muffin tin with non-stick cooking spray, then add graham crackers crust.
You’ll need to make the crust firm so that it sticks together. I did this by pushing down with a shot glass.
Next you’ll need chocolate. I used dark chocolate because it’s my favorite but you can use any kind you’d like. Fill a small bowl with 3/4 cup of chocolate chips and microwave for 90 seconds. Stir, then microwave in 30 second increments until chocolate is completely melted and smooth.
Add a tablespoon of chocolate to each muffin tin.
Place the pan in the freezer until chocolate hardens. Then top the chocolate with 1/2 tablespoon of marshmallow fluff.
Return to the freezer until you’re ready to serve your ice cream sundae s’mores. The great part about this dessert is that you can make them ahead of time and all you have to add is the Blue Bunny ice cream, Reddi-wip and sprinkles.
To remove the s’mores from the pan, just stick a knife in between the tin and the s’more and it should pop right out.
I’d picked up these mini plastic bowls and was just waiting for the right time to use them. They were perfect for these s’mores. After I put put the layered bottom in the bowl, I topped it with a small scoop of Blue Bunny Vanilla ice cream.
After adding a dollop of Reddi-wip and topping with chocolate sprinkles, the s’mores were ready to serve.
These are perfect for summer parties and you can even turn this into a mini sundae bar, with different Blue Bunny flavors and toppings to choose from.
Bite Size Ice Cream Sundae With A S'mores Twist
Can't decide between making ice cream sundaes or s'mores? Now you can do both with these yummy bite size desserts!
- 3/4 cup graham cracker crumbs
- 3 tbsp butter
- 3 tbsp sugar
- 3/4 cup chocolate chips milk or dark chocolate
- 1/2 cup marshmallow fluff
- 1 1/2 cups Blue Bunny Vanilla Ice Cream
- chocolate sprinkles for garnish
Spray a mini muffin tray (with room for 12 muffins) with non-stick cooking spray.
Combine graham cracker crumbs, butter and sugar in a bowl and mix until moist.
Spoon one tablespoon of the crust mixture into each of the 12 mini muffin tins. Press hard with an object such as a shot glass to make it firm. Be sure to make it as firm as possible or it may fall apart when removing it from the muffin tins.
Melt 3/4 cup of chocolate chips in the microwave. Start by setting it for 90 seconds, stir, then microwave in 30 second increments until smooth and creamy.
Spoon 1 tablespoon of melted chocolate into each muffin tin.
Place in freezer until chocolate is hardened, approximately 15 minutes.
Add 1/2 tablespoon of marshmallow fluff to each muffin tin. Return to freezer.
When ready to serve, pop the crust layers out of the muffin tins by sliding a knife down one side. They should pop right out.
Top with a small scoop of Blue Bunny Vanilla Ice Cream (or any other Blue Bunny flavor you'd like).
Top with a dollop of Reddi-wip and chocolate sprinkles. Serve immediately.
