Back to school is looking a little different for us this year. We recently moved into a new house so both my girls are starting the year at brand new schools. The change was even bigger for Ashling, my oldest. Not only is she at a new school but it’s middle school, something that she’s been pretty anxious about. She’s already very shy so I knew middle school would take some getting used to.
Even Keira, usually my social butterfly, was nervous to start over at a new school, especially since she’d be without her big sister for the first time. I needed to do something to ease their minds.
Tales Of Tofu
That’s where The Tales Of Tofu comes in. Joining forces with Melissa Rauch, House Foods created this cute e-book to inspire children and their families to eat healthier. It introduces kids to tofu, a food that’s good for them but that they may not know much about…yet.
The main character of this e-book from House Foods is a mild-mannered little guy named Tofu. Surrounded by big flavors, he wonders how he’ll ever be able to stand out in the crowd. He’s insecure and unsure of himself until all the other foods gather to support him, making him the star of their production. They show him that everyone, and every food, has something special to offer and that together, they can make great things.
I love the message that this e-book sends to my girls. Even better, House Foods has filled it chock full of fun, easy recipes. With the girls going back go school, life has been super hectic and we all know that easy recipes are a mom’s best friend, right? Plus, kids love helping in the kitchen and my girls and I had a blast making this Tofo Taco recipe.
You don’t need many ingredients for this recipe either. Start by cutting pressed House Foods Tofu (Extra Firm) into cubes. then stir in a packet of taco seasoning.
Add oil to a pan and cook the tofu until it browns.
In separate pans, cook black beans and corn over medium heat until heated through.
The final step is to warm the corn tortillas.
Now you can put all the ingredients together to make your Tofu Tacos. This the the part my girls love the most (though some of our cheddar cheese always “mysteriously” disappears).
My girls had so much fun making these and they turned out delish!
I’ve had tofu in other recipes but never in tacos. Coating the tofu in taco seasoning added so much flavor and just the right amount of kick.
Just like he’s the star of the e-book, Tofu was the star of our tacos too. I loved that this story gave my girls something to relate to and hopefully it eased their anxiety a little too.
Now we can’t wait to try some of the other House Foods recipes. They all look delish and are perfect for our busy, on-the-go lifestyle. It’s so easy to put together after a day of school, after school activities, errands, etc. In fact, once I cook the tofu, I can let my kids do all the work!
It’s always more fun to eat tofu tacos when you made them yourself, right?
- 1 pkg House Foods Tofu Extra Firm, drained, pressed & cut into 1/2 inch cubes (alternative option: crumbled tofu)
- 1 pkg low sodium taco seasoning
- 12 corn tortillas
- 1 (15 oz) can of low sodium black beans, drained
- 1 (15 oz) can of corn, drained
- 1/3 head lettuce, shredded
- 1 tbsp oil
- Salsa to serve
- 1 Avocado, pitted and cubed
- Chopped cilantro
- Cheddar cheese
- Coat tofu in taco seasoning.
- Add oil to a pan set to medium-high heat and cook tofu until browned. Set aside. (If crumbling tofu, add to pan and sprinkle with taco seasoning)
- Add black beans and corn into separate pots set to medium heat. Heat until cooked through.
- Warm tortillas in a separate pan.
- Fill tortillas with tofu, black beans, corn and lettuce. top with avocado, cheese, cilantro and lime juice (optional)
