I’m always looking for easy breakfast ideas and it doesn’t get much better than this sausage egg muffins breakfast recipe. They’re great for both a family breakfast or when we just need something on the run. Plus, they’re so versatile, you can pretty much make them with whatever you want.
I’m a big fan of switching out my regular food or drinks for healthier options because making a few substitutions here and there requires very little effort. Every little bit helps, right? Plus, I usually don’t even miss the food or drink that I’m giving up.
That’s why I recently made the switch to Hood Calorie Countdown, a tasty dairy beverage that I’ve started using for my coffee, cereal and even my egg muffins. My favorite is the 2% but you can also choose from whole, fat-free and even a chocolate flavored version.

There are a lot of advantages to making the switch to Hood Calorie Countdown. These dairy beverages contain up to 56% fewer calories, 75% fewer carbs and 75% less sugar than their traditional counterparts. Even better, the farmers who make it have pledged not to use artificial growth hormones. It’s made by combining ultra-filtered milk with water, cream and other ingredients and to me it tastes slightly sweeter (and better!) than regular milk.
Since I’ve been using it for everything else lately, I thought I’d try it in one of my favorite breakfast recipes, egg muffins with sausage and hash browns. Not only does this recipe taste amazing but it’s one of my favorite easy breakfast ideas. You can whip up a batch ahead of time, freeze them, then pop ’em in the microwave when you need a quick breakfast to go.
Also known as muffin tin eggs, I like to use my mini muffin pan to make these types of egg recipes. However, you can use the larger size muffin tins if you prefer (you’ll just have to cook them a little longer). Now, are you ready for what’s going to become your favorite egg breakfast? Egg Muffins With Sausage, Cheddar & Onion
Preheat oven and spray a mini muffin tin with cooking spray. Brown the sausage on the stove. I use spicy sausage but mild works too.
Set the sausage aside and use the small amount of grease still left in the pan to saute chopped onions. While the sausage and onions are cooking, divide the hash browns equally into each muffin tin.
Mix the eggs and Hood Calorie Countdown in a bowl.
Add sausage, onions and cheddar (I substituted low fat cheddar).
Add a little salt and pepper, then mix the ingredients and fill the muffin tins.
Cook at 350 for 20 minutes, then remove from oven. If you have any cheese or sausage left over, sprinkle a little more on top. You can also garnish these with parsley.
These looked SO good that it was hard to wait for them to cool.
Luckily it only takes a minute or so before they’re cool enough to take out of the muffin tin.
These were so delish that I’ll probably even double the recipe next time. This recipe makes 12 mini egg muffins but once my hubby and I were done, there weren’t many left!
In addition to substituting Hood Calorie Countdown for the milk, you can substitute turkey sausage too.
Once school is back in session, these muffin tin eggs are going to be perfect for those days when we’re running late for the bus. I’ll have to be sure to keep extras in my freezer!
