I love this time of year because summer is just around the corner. Even though it doesn’t officially begin until the middle of June, I always feel like Memorial Day is the real start of summer, don’t you? School is getting out, the weather is warming up and it’s time to start up the BBQ and invite some friends over.

Of course, you’ll need some fun snacks and these red, white and blue strawberries are perfect. They’re festive, easy to make and who doesn’t love chocolate covered strawberries?! I was really just looking for an excuse to pull out the candy melts since I haven’t used them for awhile!

You don’t need much to make these…just a 16 oz container of strawberries, blue and white candy melts, cream cheese and some sprinkles.

Start with candy melts for your Red White And Blue Strawberries

Take the cream cheese out of the refrigerator so that it will soften and be easier to work with. Next, core all your strawberries. I LOVE this little gadget and use it pretty much every day!

Core the strawberries first

Once you’ve washed and cored the strawberries, melt 1/2 cup of white candy melts.  I also add about 1/2 tsp of vegetable oil to give it a smoother consistency. Dip 1/2 of the strawberries in the candy melts (approx 10-12 strawberries), then add sprinkles. Refrigerate until the candy hardens, approx 5-10 minutes.

Use candy melts and sprinkles to make Red White And Blue Strawberries

Next, melt 1/2 cup of blue candy melts and dip the remaining strawberries. Place on wax paper and refrigerate for a few minutes, then dip the ends in the leftover white chocolate. Put back in the refrigerator to harden completely.

Finally, fill the strawberries with cream cheese. I used a cake decorating bag and tip but if you don’t have one, you can always use a plastic sandwich bag with one corner cut off.

Cream cheese is the secret ingredient in Red White And Blue Strawberries

I love how colorful and festive these turned out!
