It was a fun week entertaining our visiting family and trying out some new recipes. I paid no attention to my usual budget because it was more important to be sure I had plenty of food (and wine) in the house for our guests. I didn’t want to run out of anything, especially since two of our guests were very hungry, growing boys! Here’s how I did with last week’s Meal Plan Monday challenge…
The lasagna was delicious but I only used 1/2 the ricotta called for in the recipe. I like a lot of cheesiness in my lasagnas but two pounds just seemed like a crazy amount. We also liked the turkey meatloaf and I’ll make that again. The kebobs turned out awesome but we made the classic mistake of not following directions with the beer can chicken. We left the can full (instead of drinking half of it first) so the liquid never got as hot as it’s supposed to. We also forgot to stick the potato in the top. The chicken turned out okay but I think it could be better if we actually do it how we’re supposed to next time. The only thing we didn’t make was the Mustard Balsamic Pork Chops with Rosemary. However, I have all the ingredients now so I’ll just make it another week…
The Grocery Store:
I only made one trip…yay!!! It’s been surprising how well I’m doing with this. It sure does make my life easier and takes all the frustration out of bringing my kids to the grocery store with me several times a week!
Definitely a fail on this one but I don’t feel bad about it because it was to be expected. You never want to run out of food when you have guests so I went way over budget and stocked up. When I say way over budget, I mean it…I spent almost $200!!! Guess that would be a colossal fail…oops!
This week’s menu:
This week is kind of crazy and without going into too much detail, I’m not exactly sure how many meals I’ll be cooking! Our relatives will be back in town for five days after a short getaway but I’m not really sure what the plan is. Originally they were staying with my MIL this week but due to some unexpected circumstances, they might be staying with us. I’m just going to go with the flow and plan five meals with ingredients that I can freeze if I don’t get around to making them.
I also think that this seems like the perfect time to break out some of my slow cooker recipes! I recently bought a slow cooker and have been pinning all kinds of awesome recipes (15 Amazing Slow Cooker Recipes That You’ll Want to Try). I can’t wait to try a few of them out!

I’m going to wing it for the last two days since it may just be the girls and I. They are easy and I’ll be able to get away with spaghetti, tortellini, chicken drumsticks or a plethora of other kid friendly foods. No strict meal plans for this week…we’ll just see how it all shakes out!
