My husband likes to say he fixed me. Years ago, I watched college football all the time. That was when I was going to a college with a very high profile football team. Every Saturday was spent tailgating and going to the games. However, once I got out into the real world, I might check the scores to see if my team won but that was the extent of it. I didn’t watch an actual game for years.

However, when I started dating my hubby, Saturdays were for football and nothing but football. I remember the first time I watched college football with him. We literally watched for about 10 hours straight. If you can’t beat ’em, join ’em, right? The more I watched, the more I got back into it and now we love watching football together! That’s why my hubby says he fixed me. Even our girls like to watch with us. They put on their red & black, grab the pom poms and help us cheer on our favorite team.

Of course, we get hungry watching the games and nothing goes better with football than grilling out! Last time I was at Walmart, I thought it was time to try a healthier alternative to the burgers. I picked up a couple of MorningStar Farms® Spicy Black Bean Burger Value Packs and since these are America’s #1 Veggie Burger, I knew they were going to be good! I also threw in MorningStar Farms® Garden Veggie Burgers. I’m not a vegetarian but it doesn’t matter…these just taste good!

I picked up my veggie burgers at Walmart

Not only are MorningStar Farms burgers great for grilling out, they’re also perfect for when I need a quick and easy meal. If we get home late and I don’t have time to prepare a meal from scratch, I just serve these with a little salad on the side. The kids love them and it sure makes my life easier!

There are so many great recipes that you can create with MorningStar Farms products but my plan was to make Mini Veggie Cheeseburgers. You don’t have to be a vegetarian to love these…they’re so good! Of course, they’re perfect for game time too!

You’ll need a round cookie cutter to make this but I have a little secret. I didn’t have a round cookie cutter so I improvised. I used a cookie cutter shaped like a Christmas ornament, then went back and cut off the top to make it perfectly round. Don’t worry if you don’t have a round cookie cutter or even one shaped like an ornament…just use whatever will work. Even a skinny glass should do the trick.

First, throw the Black Bean Burgers on the grill. Like MorningStar Farms says, you have to grill it to believe it!

While they’re cooking, cut “buns” out of slices of bread.

Your mini veggie burger will need a bun

Toast them in the toaster oven for a minute or two.

Buns are always better toasted

Cut skinny plum tomatoes into slices.

Slice a small tomato

Use your cookie cutter, or whatever you’ve got, to cut lettuce into circles.

Then do the same with sliced cheddar.

Dice some onions.

Dice some onion for extra flavor

When the black bean burgers are finished cooking, cut those into circles as well.

Wondering what to do with all the pieces you have left over? I was going to throw the cheese and burger pieces into my eggs the next morning but my family decided that they’d snack on them instead. My oldest daughter had never tried a black bean burger before and she loved it! There were no leftovers for me but my family sure was happy!

Now it’s time to put it all together. Start with the burger…

Now put your mini veggie burger together

Add cheese,

Add cheese

lettuce,

Add lettuce to your mini veggie burger

tomato,

Add a tomato

a pickle,

You'll need a pickle for your mini veggie burger

onion,

Throw on some diced onions for extra flavor

and top with ketchup and mustard.

Voila…your mini veggie cheeseburger is ready to serve!

Mini Veggie Cheeseburgers

Ingredients
 

  • 8 MorningStar Farms® Spicy Black Bean Burgers
  • 8 slices bread
  • 4 slices cheddar cheese
  • 2 plum tomatoes
  • 3 leaves of iceberg lettuce
  • 1/4 cup diced onions
  • 8 hamburger pickles
  • ketchup & mustard to taste

Instructions

  • Cook burgers according to instructions on package
  • Using a round cookie cutter, cut two small circles from each burger
  • Cut 16 circles from the bread
  • Cut cheese into 8 circles
  • Slice plum tomatoes (you'll need 8 slices)
  • Cut 8 circles from the lettuce
  • Toast bread until lightly brown
  • Top with a burger circle, cheese, lettuce, tomato, pickle, onion, ketchup and mustard
  • Secure with a toothpick and serve
