It’s March and you know what that brings! No, I’m not talking about leprechauns and Easter bunnies…I’m talking about basketball. More specifically, I’m talking about the college basketball championship!
I’ll be honest. I don’t really watch much basketball during the regular season…I’m more of a football girl. However, these games give me and my friends a great excuse to get together, watch sports, have a beer or two and engage in some friendly bracket competition! If you’ve never participated in the brackets, you’re missing out! The beauty of it is that you don’t even have to know what you’re doing. Sometimes I’ll do a quick google search to get a feel for who’s expected to do well but usually I’ll just guess completely. I love when I guess on the brackets and they do better than the ones my husband and his friends spent hours strategizing over ! I’m planning to play again this year and while I haven’t won yet, who knows, maybe this is my season!
This year when I have my friends over, I’m going to serve more than just the usual chips and dip. Of course, you can never go wrong with those but I wanted to serve something a little different too. I was thinking of something along the lines of smoked salmon and cream cheese and since I was serving Pringles anyway, Pringles with smoked salmon, cream cheese and capers sounded like a great idea. It’s simple enough to throw together last minute but original enough to make it look like I’d put a lot of thought into it!
The Pringles were super easy to find at Target because they were right up front by the entrance. Now’s the time to get them because Pringles Super Stacks will be 3 for $4 from the 3rd week of February through the 1st week of April. You can also check out Target’s digital circular this week to find great deals on Cheez-It’s and other Kellogg’s products.
I grabbed a couple extra cans of the Cheddar Cheese flavor to serve on their own, just because they’re so good! I found the rest of my ingredients and hit the door. Okay, I lied! I walked around Target for another hour after that. Did you seriously think I could go in and just grab a couple things and go? Can anybody actually do that? Not me…I love Target way too much!
So now I had everything I needed and it was time to work on my recipe. I couldn’t wait to get started, mostly so I could sample it myself! Wait until you see just how easy this is!
Start with an original Pringles potato chip. Add a piece of smoked salmon, some cream cheese and then top with delicious capers! As the official taste tester, I can assure you that the combination was delicious!
While my friends and I always play the regular brackets, there are always a few people who don’t know anything about it and are completely bored with basketball. Well, I want everyone to have fun at my parties so I created the Boredom Buster Bracket. This one is based on totally random things within the game (and commercials) and the bonus is that it lasts for a single game instead of several weeks. The game starts when the first buzzer sounds and ends at the final buzzer (or when all the brackets have been filled out). If you and your friends are competitive, you’ll love it! Just print them out before your friends arrive and you’ll be ready to play!
Once you’ve printed your brackets and set out the food, your work is done. Now you can sit back, hang with your friends and enjoy the party!
- 24 original flavor Pringles chips
- 4 oz smoked salmon
- 3 oz cream cheese
- 2 tbsp capers
- Lay chips side by side
- Slice salmon into thin pieces
- Top chips with smoked salmon
- Add cream cheese and top with capers
