Sheet Pan Chicken & Veggies


6 chicken thighs Red/Yellow/Green peppers   1 red onion 1 lemon 2 cups mushrooms 3-4 cloves garlic 1 TBL thyme 1/4 cup olive oil  1 tsp salt 1/2 tsp pepper 1/2 tsp onion powder

Step 1: Combine the oil, garlic, lemon juice and thyme in a small bowl. Whisk to combine for the marinade.

Step 2: In a large bowl or on a large sheet pan, sprinkle the chicken with onion powder, salt, and pepper.

Step 3: Place the chicken and marinade in a gallon size bag and let marinate for at least 15 minutes

Step 4: Place the chicken thighs in a single layer on a rimmed baking sheet. Bake at 375 for 20 minutes.

Step 5: Add vegetables and cook for 25 minutes more. Internal temperature of the chicken should be 165.

Step 6: When the chicken is finished baking, garnish with fresh thyme and serve fresh from the oven.
