3 medium zucchini ends trimmed 1 1/2 tablespoons olive oil separated 1 cup grape tomatoes cut 1/2 6 oz. sliced mushrooms 2 boneless chicken breasts 3 tbsp pesto shredded parmesan cheese basil leaf for garnish
Cut chicken into bite size pieces
Add 1/2 tbsp olive oil to a pan and cook chicken over medium heat until internal temperature reaches 165
Set aside
Place the spaghetti blade over the collecting bowl and attach the feed chute lid
Secure food pusher in zucchini, select go and process zucchini
Empty contents of collecting bowl and repeat with remaining zucchini
Heat 1 tbsp olive oil in a non-stick skillet over medium-high heat
Add mushrooms, sautee for about a minute, then add zucchini noodles
Cook or 2-3 minutes
Add chicken, tomatoes and pesto and cook for 1-2 more minutes
Top with parmesan cheese and garnish with basil leaf
