Zucchini Noodles With Pesto, Chicken And Mushrooms

Ingredients

  • 3 medium zucchini ends trimmed
  • 1 1/2 tablespoons olive oil separated
  • 1 cup grape tomatoes cut 1/2
  • 6 oz. sliced mushrooms
  • 2 boneless chicken breasts
  • 3 tbsp pesto
  • shredded parmesan cheese
  • basil leaf for garnish

Instructions

  • Cut chicken into bite size pieces
  • Add 1/2 tbsp olive oil to a pan and cook chicken over medium heat until internal temperature reaches 165
  • Set aside
  • Place the spaghetti blade over the collecting bowl and attach the feed chute lid
  • Secure food pusher in zucchini, select go and process zucchini
  • Empty contents of collecting bowl and repeat with remaining zucchini
  • Heat 1 tbsp olive oil in a non-stick skillet over medium-high heat
  • Add mushrooms, sautee for about a minute, then add zucchini noodles
  • Cook or 2-3 minutes
  • Add chicken, tomatoes and pesto and cook for 1-2 more minutes
  • Top with parmesan cheese and garnish with basil leaf
  • Enjoy!
