Homemade Chicken Noodle Soup

Once you make this delicious (and easy) homemade chicken noodle soup, you'll never want soup from the can again!

Ingredients

  • 1 tbsp olive oil
  • 1 cup rotisserie chicken (cut)
  • 3/4 cup carrots (sliced)
  • 3/4 cup onions (diced)
  • 3/4 cup celery (diced)
  • 1/2 tsp minced garlic
  • 6 cups chicken broth
  • 1 1/2 cup egg noodles
  • 1/2 tsp basil (dried)
  • 1/2 tsp thyme (dried)
  • 1/2 tsp oregano (dried)
  • parsley for garnish (optional)

Instructions

  • Heat olive oil in stock pot
  • Add carrots and saute over medium heat for two minutes
  • Add onion, celery, garlic, basil, thyme and oregano and saute until vegetables are cooked through (approx 4-5 minutes)
  • Pour in broth and bring to a boil
  • Stir in egg noodles and cook until tender
  • Add chicken, cooking until warmed through
  • Add salt and pepper to taste
  • Enjoy!
