Homemade Chicken Noodle Soup
Once you make this delicious (and easy) homemade chicken noodle soup, you'll never want soup from the can again!

- 1 tbsp olive oil
- 1 cup rotisserie chicken (cut)
- 3/4 cup carrots (sliced)
- 3/4 cup onions (diced)
- 3/4 cup celery (diced)
- 1/2 tsp minced garlic
- 6 cups chicken broth
- 1 1/2 cup egg noodles
- 1/2 tsp basil (dried)
- 1/2 tsp thyme (dried)
- 1/2 tsp oregano (dried)
- parsley for garnish (optional)
Heat olive oil in stock pot
Add carrots and saute over medium heat for two minutes
Add onion, celery, garlic, basil, thyme and oregano and saute until vegetables are cooked through (approx 4-5 minutes)
Pour in broth and bring to a boil
Stir in egg noodles and cook until tender
Add chicken, cooking until warmed through
Add salt and pepper to taste
