Party Crackers With Steak, Arugula And Blue Cheese

Ingredients

  • 40-45 RITZ Crackers
  • 1 1/2 cups balsamic vinegar
  • 1 lb steak (I used boneless NY strip)
  • Garlic salt
  • Salt & pepper to taste
  • 1 1/2 cups arugula
  • 3 oz blue cheese

Instructions

  • Reduced balsamic vinegar:
  • Heat balsamic vinegar in a saucepan until boiling
  • Reduce temperature and simmer for 8-12 minutes, stirring occasionally
  • Vinegar is ready when it reaches a syrupy consistency and leaves a coating on the spoon
  • Place in refrigerator to cool
  • Season steak with garlic, salt & pepper
  • Cook to desired temperature
  • Cut into thin strips, then cut each strip into one inch pieces
  • Place each piece on a RITZ Cracker
  • Top with one or two arugula leaves
  • Sprinkle blue cheese on top
  • Drizzle with the reduced balsamic vinegar
  • Enjoy
