Place NILLA Wafers to cake board in rows of 9 across and 7 down.
Place blue candy melts in microwave for one minute. Remove and stir in 1/8 teaspoon vegetable oil. Continue to melt in 30 second increments until completely smooth.
Using a plastic decorating bottle, add small drops of candy melts to the bottom of each cookie to keep it from sliding around.
Drizzle remaining blue candy over the 9 cookies in the top left (forming a square)
Melt red candy melts in the microwave for one minute.
Stir in 1/4 teaspoon vegetable oil and continue to microwave in 30 second increments until completely melted.
Drizzle the red melts over the top row and every other row down to the bottom.
Repeat with white candy melts and drizzle over the remaining NILLA Wafers
Beat whipping cream until stiff peaks form. Set aside.
Mix cream cheese, sugar and vanilla until well blended
Fold in whipping cream
Separate 1/4 cup of cheesecake mixture and mix in blue food coloring or gel
Divide the remaining cheesecake in half, coloring one red and leaving the other white.
One color at a time, put cheesecake in decorating bags and top each NILLA Wafer with a large dollop of cheesecake
Sprinkle red and white sprinkles over the top (red on the red cheesecake cookies and white on the blue and white cheesecake cookies)
