Ingredients
3medium zucchiniends trimmed
1 1/2tablespoonsolive oilseparated
1cupgrape tomatoescut 1/2
6oz.sliced mushrooms
2boneless chicken breasts
3tbsppesto
shredded parmesan cheese
basil leaf for garnish
Instructions
Cut chicken into bite size pieces
Add 1/2 tbsp olive oil to a pan and cook chicken over medium heat until internal temperature reaches 165
Set aside
Place the spaghetti blade over the collecting bowl and attach the feed chute lid
Secure food pusher in zucchini, select go and process zucchini
Empty contents of collecting bowl and repeat with remaining zucchini
Heat 1 tbsp olive oil in a non-stick skillet over medium-high heat
Add mushrooms, sautee for about a minute, then add zucchini noodles
Cook or 2-3 minutes
Add chicken, tomatoes and pesto and cook for 1-2 more minutes
Top with parmesan cheese and garnish with basil leaf
