Mini Fruit Tart Recipe

With sweet sugar cookie crusts and a decadent cream cheese filling topped with fresh fruit, these Mini Fruit Tarts make the perfect bite size dessert!

Ingredients

  • 16.5 ounces refrigerated sugar cookie dough
  • 8 ounces cream cheese softened
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • 2 cups powdered sugar
  • Fruits of choice berries, kiwi, mandarin oranges, etc

Instructions

For The Sugar Cookie Cups

  • If using a mix, prepare sugar cookie dough according to package or recipe directions. (If using prepackaged dough, skip to step 2)
    16.5 ounces refrigerated sugar cookie dough
  • Using a dough scoop or small spoon, scoop out a tablespoon of tart dough at a time. Roll into a ball and place in a mini muffin pan.
  • Press a hole in the center of each ball of dough and press the dough into the edges of the muffin tin creating little tart shapes.
  • Bake the dough according to package or recipe directions.
  • Remove from the oven and allow to cool for about 5 minutes. Then remove from the muffin pan to cool completely.

For The Cream Cheese Filling

  • Place the cream cheese in a large bowl and mix with an electric mixer until light and fluffy.
    8 ounces cream cheese
  • Add vanilla, a pinch of salt, and then add in powdered sugar gradually, mixing after each addition until it is all incorporated.
    1/2 teaspoon vanilla extract, 1 pinch salt, 2 cups powdered sugar

Decorating The Tarts

  • Slice the berries and fruit into small pieces that will easily fit on top of each

  • Once the cookie cups are cooled completely fill them with the cream cheese mixture. You can use a piping bag or spoon the filling into the center of each cup.
  • Decorate the tops of each tart assorted chopped fruit and berries.

Notes

If you really want to give these mini treats a special added touch, brush the tops of the tarts with an apricot glaze. To make it, in a small bowl, add about 1/4 cup apricot jam, a little water, a squeeze of fresh lemon juice and lemon zest and stir well.
