  • Preheat your oven to 400 degrees Fahrenheit. Next, line a large, rimmed baking sheet with parchment paper.
  • Fill the sheet with your saltine crackers in a single layer. Set aside.
  • Melt butter in a medium saucepan over medium heat.
  • Once butter is melted, add the brown sugar.
  • Whisk together as you cook on medium heat, continuing until the sugar is completely dissolved in the butter. This should take 3-4 minutes.
  • Remove the toffee mixture from the heat and immediately pour it over your layer of saltines so that all the crackers are covered.
  • Place the baking sheet in the oven and bake for about 4 minutes. The sugar and butter will be very hot and bubbly.
  • Remove crackers from the oven and immediately sprinkle two cups of white chocolate chips over the top (be sure the crackers are still hot). Once they start to melt, spread them over the crackers.
  • Melt the additional 1 cup of white chocolate chips (or white candy melts) in the microwave using the same method as the previous batch. Once melted, add 1-2 drops of pink gel food coloring and mix well.
  • Once the white chocolate is spread evenly, drop spoonfuls of the pink chocolate all over the white chocolate and use a fork or the back of a spoon to swirl the colored chocolate around.
  • Top the layer of chocolate with mini eggs, M&Ms, and your favorite sprinkles while the pink layer is still soft. Place the baking sheet in the refrigerator to chill for at least 30 minutes and allow the candy to harden.
  • Once the mixture has solidified, break into chunky pieces and enjoy!

Notes

  • Let your toffee harden completely before you attempt to break it into pieces. It will be easier to work with and you’ll get nice crisp edges.
  • Be sure that you're using a rimmed baking sheet or to ensure that none of the hot toffee spills over the edges.
