  • Preheat your oven to 350 degrees. Spray a 9×13 inch baking dish with nonstick cooking spray and set aside.
  • In a large mixing bowl, fold together the lemon cake mix and the eggs. Add the softened butter and mix until a dough forms.
    15.25 ounces lemon cake mix, 2 eggs, 8 Tablespoons unsalted butter
  • Press the lemon dough into the bottom of the pan, making sure to spread it evenly to the edges of the pan.
  • Bake the bars at 350° for 16-18 minutes, until the top begins to turn golden brown. Allow the bars to cool to room temperature.
  • Make the glaze by whisking together the powdered sugar and lemon juice.
    ½ cup powdered sugar, 1 ½ Tablespoon Fresh lemon juice
  • Drizzle the lemon glaze over the bars. Enjoy

Notes

  • Add a little crunch by adding mini white chocolate chips or finely chopped macadamia nuts to the batter.
  • These can be stored in an airtight container at room temperature for up to 3-4 days or in the fridge for up to a week.
