Chicken Fajita Bites

Ingredients

  • 2 15 ct. packages mini fillo shells
  • 1 boneless chicken breast diced
  • 1/2 each red yellow and green bell peppers
  • 1/2 onion I used white
  • 1 tablespoon fajita seasoning
  • 3/4 cup sour cream
  • 2/3 cup salsa
  • 1 tablespoon olive oil

Instructions

  • Preheat the oven to 375
  • Dice your bell pepper and onions or cut into strips
  • Heat 1/2 tbsp of olive oil in saute pan or frying pan
  • Cook bell peppers over medium heat for two minutes and add onion, stirring frequently
  • Cook another 5 minutes, remove from heat and set aside
  • Place fillo shells on baking sheet and heat in oven for 8 minutes or until golden brown
  • Meanwhile, add another 1/2 tbsp of olive oil to pan
  • Place diced chicken in pan, add fajita seasoning and stir until evenly coated
  • Cook chicken until it reaches 165, remove from heat and set aside.
  • Remove fillo shells from oven and add chicken to each
  • Fill in empty areas around the chicken with salsa
  • Top with sour cream, peppers and onions
