Preheat the oven to 375
Dice your bell pepper and onions or cut into strips
Heat 1/2 tbsp of olive oil in saute pan or frying pan
Cook bell peppers over medium heat for two minutes and add onion, stirring frequently
Cook another 5 minutes, remove from heat and set aside
Place fillo shells on baking sheet and heat in oven for 8 minutes or until golden brown
Meanwhile, add another 1/2 tbsp of olive oil to pan
Place diced chicken in pan, add fajita seasoning and stir until evenly coated
Cook chicken until it reaches 165, remove from heat and set aside.
Remove fillo shells from oven and add chicken to each
Fill in empty areas around the chicken with salsa
Top with sour cream, peppers and onions
