Ingredients

  • 12 butterfly shrimp
  • 1/4 cup cream cheese
  • 6 slices bacon
  • 1 heaping tbsp of thinly sliced scallions
  • 12 phyllo pastry sheets
  • 1/3 cup butter
  • salt & pepper to taste

Instructions

  • Pre-cook shrimp for 5 minutes at 425
  • Reset oven to 375
  • Remove shrimp tails
  • Cook bacon and break into pieces
  • Set out all ingredients before prepping the phyllo
  • Brush one layer of phyllo with melted butter
  • Place a second layer of phyllo on top of the first and brush it with melted butter as well
  • Trim the edges with a pizza cutter and make two squares
  • In the center of each square, place one shrimp, 1 tsp cream cheese, crumbled bacon (the equivalent of 1/2 slice), and 3-6 sliced scallions
  • Add salt and pepper to taste
  • Pull up corners of pastry and twist gently
  • Bake at 375 for 9-10 minutes
  • Serve warm
