Mini Egg Muffins With Bacon And Potatoes

These mini egg muffins make the perfect easy breakfast for busy moms! Filled with bacon, cheddar and potatoes, your family will want these delicious bite size eggs every morning!

Ingredients

  • 1/2 cup Tasteful Selections potatoes diced
  • 3 large eggs
  • 2 tbsp milk
  • 1/3 cup onions diced
  • 1/3 cup crumbled bacon 4-5 slices
  • 1/3 cup cheddar
  • Salt & pepper to taste
  • Extra cheese and bacon crumbles for garnish

Instructions

  • Preheat oven to 350°
  • Spray mini muffin tin with cooking spray
  • Cut potatoes in half and boil for five minutes. When they're finished boiling, dice into smaller pieces.
  • Cook bacon on stove or in microwave. Let cool and break into crumbles.
  • While bacon is cooking, combine eggs and milk in a medium size bowl.
  • Add potatoes, onions, bacon, cheddar and salt and pepper, mixing well.
  • Spoon into muffin tin.
  • Bake for 20 minutes.
  • Garnish with extra cheese, bacon and chopped parsley (optional)
  • Enjoy!

Notes

You can also buy prepared bacon crumbles to make this recipe even easier.
Double the recipe to make these in a full size muffin tin.
