Mini egg muffins make the perfect breakfast for busy moms. I’m excited to be partnering with Tasteful Selections to share how their potatoes help to make these bite size eggs deliciously easy!

Everybody has their favorite breakfast food. For some it might be cereal, others may prefer fruit and toast but I love my eggs in the morning. While I’ve had a lot of extra time lately, usually our mornings are pretty rushed and a hot breakfast isn’t always an option.

That’s why I love these mini egg muffins. They taste SO good straight from the oven but what I really like is that they can also be made ahead of time and frozen for later. Loaded with bacon, cheese and potatoes in one delicious bite, I love being able to start the day with these, even when we’re in a hurry. 

Ingredients for mini egg muffins

Tasteful Selections Bite Size Potatoes are one of the reasons these egg muffins taste so good! They pack lots of flavor in one little bite and are my go-to potatoes for breakfast, dinner and everything in between. I combine them with fresh vegetables for roasted potatoes and veggies, use them in my favorite potato soup recipe and serve them up as breakfast potatoes to go with my eggs.

As a busy mom, these potatoes have made meal prep so much easier. They’re pre-washed, don’t need peeling and cook faster than regular potatoes. I already love that they taste so good but the fact that they cut the work in half makes me love them even more.

Tasteful Selections potatoes come in a lot of varieties so you can choose a different one every night of the week. There’s Sunburst Blend, Ruby Sensations, White Delights and lots more. When we really want to switch things up, we cook up their sweet potatoes or fingerlings.

Mini Egg Muffins  

Start by cutting the potatoes in half and boiling them for five minutes (this is a great time to start cooking the bacon too). When the potatoes are finished, drain and dice them.

Mix eggs and milk in a bowl. Add bacon, cheese and potatoes.

Spray a mini muffin tin with cooking spray, spoon in the egg mixture and bake at 350° for 20 minutes.

Give your mini egg muffins a few minutes to cool, then pop them out of the muffin tin. Top with extra cheese, bacon and chopped parsley and serve. How delicious do these look?!

These mini egg muffins make such a fun breakfast. Who doesn’t love bite size foods, right? I also love that we can eat what we want and then pop the rest in the freezer for later.

Mini Egg Muffins With Bacon And Potatoes

These mini egg muffins make the perfect easy breakfast for busy moms! Filled with bacon, cheddar and potatoes, your family will want these delicious bite size eggs every morning!

Ingredients
 

  • 1/2 cup Tasteful Selections potatoes diced
  • 3 large eggs
  • 2 tbsp milk
  • 1/3 cup onions diced
  • 1/3 cup crumbled bacon 4-5 slices
  • 1/3 cup cheddar
  • Salt & pepper to taste
  • Extra cheese and bacon crumbles for garnish

Instructions

  • Preheat oven to 350°
  • Spray mini muffin tin with cooking spray
  • Cut potatoes in half and boil for five minutes. When they’re finished boiling, dice into smaller pieces.
  • Cook bacon on stove or in microwave. Let cool and break into crumbles.
  • While bacon is cooking, combine eggs and milk in a medium size bowl.
  • Add potatoes, onions, bacon, cheddar and salt and pepper, mixing well.
  • Spoon into muffin tin.
  • Bake for 20 minutes.
  • Garnish with extra cheese, bacon and chopped parsley (optional)
  • Enjoy!

Notes

You can also buy prepared bacon crumbles to make this recipe even easier.
Double the recipe to make these in a full size muffin tin.
