Ingredients

Instructions

  • Bake cake according to package instructions. Remove from oven and cool cake completely to room temperature.
    1 box chocolate cake
  • In a large mixing bowl, crumble cake into fine crumbs making sure there aren’t any large lumps of cake left.
  • Add the cream cheese. Mix until a uniform dough forms. Depending on how moist your cake is, you might use a little less cream cheese. Start by adding ½ half the cream cheese and mix. Then add a little more at a time until it holds its shape.
    1 1/4 cup cream cheese
  • Shape the cake mixture into 20 evenly sized balls of chocolate dough using the palm of your hand. Make sure to shape them until they are smooth.
  • Push a lollipop stick into each ball. Transfer them to the freezer for about 20 minutes or until they are firm.
  • Melt the white chocolate in the microwave, stirring at 15 second intervals.
1 3/4 cup white candy melts
  • Dip the cake balls into the melted candy melts.
  • Decorate the cake pops with sprinkles or nonpareils before the chocolate coating hardens.
    Valentine's Day sprinkles
  • Optional chocolate drizzle: In a small bowl, add a cup of candy melts and heat in the microwave in 5 second intervals until smooth. Add a couple of drops of pink food coloring until it’s the color you desire. Use a piping bag or cut the corner off a sandwich bag to drizzle the pink melted chocolate over the cake pops.
1/3 cup light pink candy melts
  • Refrigerate the cake pops for about 30 minutes or until the candy coating is firm.

Notes

There are two easy ways to dry your cake pops upright:
  • You can stick the end of each cake pop stick into a styrofoam block after you have dipped them in chocolate. For a pretty presentation, just cover foam block with parchment paper or colored construction paper. You can also use a cardboard box with tiny holes poked in it.
  • The other option is to fill a glass or a vase with dry rice. Then place the cake pops in the glass so that they are not touching each other. The rice helps keep them in place when transferring them to and from the fridge.
