Mango Corn Salsa

Ingredients

  • 1 mango diced
  • 1/2 cup corn kernels
  • 1 jalapeno pepper finely chopped
  • 1/2 red bell pepper finely chopped
  • 1/3 red onion finely chopped
  • 1/5 tsp salt
  • 1 tbsp lime juice
  • 2 tbsp cilantro chopped

Instructions

  • Place the diced mango, corn, jalapeno, red peppers and red onion in a large bowl.
    1 mango, 1/2 cup corn kernels, 1 jalapeno pepper, 1/3 red onion, 1/2 red bell pepper
  • Add salt, lime juice, and chopped cilantro.
    1/5 tsp salt, 1 tbsp lime juice, 2 tbsp cilantro
  • Stir the salsa mixture thoroughly, then cover the bowl with a lid or plastic wrap. Place it in the refrigerator to chill for 30 minutes, then mix again just before serving.

Notes

  • If you don’t have mango on hand, you can add pineapple instead . You could even add both for an extra dose of tropical flavor.
