Place the diced mango, corn, jalapeno, red peppers and red onion in a large bowl.
1 mango , 1/2 cup corn kernels, 1 jalapeno pepper , 1/3 red onion, 1/2 red bell pepper
Add salt, lime juice, and chopped cilantro.
1/5 tsp salt, 1 tbsp lime juice, 2 tbsp cilantro
Stir the salsa mixture thoroughly, then cover the bowl with a lid or plastic wrap. Place it in the refrigerator to chill for 30 minutes, then mix again just before serving.
Notes
If you don’t have mango on hand, you can add pineapple instead . You could even add both for an extra dose of tropical flavor.
