Place the plastic shot cups on a baking sheet or in a muffin tin. Whisk together ¾ cup pineapple juice and 1 envelope of Knox gelatin in a medium saucepan.

Stir in the grenadine and heat the gelatin mixture over medium-low to medium heat until it begins to steam.

Pour the gelatin into the plastic cups in a thin layer, dividing it evenly between the cups. Move the cups to the refrigerator to chill for 1 hour.
In a medium saucepan, whisk 2 cups pineapple juice, 1 cup whipped cream vodka and 3 envelopes of Knox gelatin. Heat over medium-low until just steamy.

Divide the mixture evenly to fill the cups the rest of the way to the top. Chill in the refrigerator for 2 more hours, until set.
Before serving, cut a small circle in the center of each shot and place a maraschino cherry into it. Enjoy!
Maraschino cherries for topping
Be sure to let the bottom gelatin layer cool completely and set before adding the second layer. Otherwise, your colors may run together.
