  • Place the plastic shot cups on a baking sheet or in a muffin tin. Whisk together ¾ cup pineapple juice and 1 envelope of Knox gelatin in a medium saucepan.

  • Stir in the grenadine and heat the gelatin mixture over medium-low to medium heat until it begins to steam.

  • Pour the gelatin into the plastic cups in a thin layer, dividing it evenly between the cups. Move the cups to the refrigerator to chill for 1 hour.
  • In a medium saucepan, whisk 2 cups pineapple juice, 1 cup whipped cream vodka and 3 envelopes of Knox gelatin. Heat over medium-low until just steamy.

  • Divide the mixture evenly to fill the cups the rest of the way to the top. Chill in the refrigerator for 2 more hours, until set.
  • Before serving, cut a small circle in the center of each shot and place a maraschino cherry into it. Enjoy!

Notes

  • Be sure to let the bottom gelatin layer cool completely and set before adding the second layer. Otherwise, your colors may run together.
