  • Knox gelatin, divided
  • Pineapple juice, divided
  • Grenadine
  • Whipped cream vodka
  • Maraschino cherries for topping
  • 2 oz. plastic cups

How to Make Pineapple Upside Down Cake Jello Shots

Step 1: Place the plastic shot cups on a baking sheet or in a muffin tin. Whisk together ¾ cup pineapple juice and 1 envelope of Knox gelatin in a medium saucepan.

Step 2: Stir in the grenadine and heat the gelatin mixture over medium-low to medium heat until it begins to steam.

Step 3: Remove from heat and pour the gelatin into the plastic shot glasses, dividing it evenly between them. Move the cups to the refrigerator to chill for 1 hour.

Step 4: In a medium saucepan, whisk 2 cups pineapple juice, 1 cup whipped cream vodka and 3 envelopes of Knox gelatin. Heat over medium-low until just steamy.

Step 5: Divide the mixture evenly to fill the cups the rest of the way to the top. Chill in the refrigerator for 2 more hours, until set.

Step 6: Before serving, cut a small circle in the center of each shot and place a maraschino cherry into it. Enjoy!

Tips & Tricks

  • For a quicker version of this shot, you can use cherry Jello for the bottom layer and pineapple Jello for the top layer.
  • Make sure that the bottom gelatin layer is completely set and has cooled to room temperature before adding the second layer. Otherwise, your colors may run together.
  • Add some whipped topping in place of (or in addition to) the cherries. You can also garnish with pineapple rings or wedges.
  • Spray cooking spray into the cups before filling them to help the Jello mixture slide out easier.

How Do I Store Pineapple Upside Down Jello Shots?

Jello shots should keep in the fridge for about 4-5 days. Cover your shots with plastic wrap or place them in an airtight container before storing in the fridge. You can also use shot cups with lids.

Can I Use a Different Type of Alcohol?

Sure – you can use regular vodka, or regular or coconut rum in these shots. Vanilla vodka or cake vodka would also be delicious.
