In a large bowl, combine the softened butter, brown sugar and white sugar. Blend with an electric hand mixer or a stand mixer with a paddle attachment.

Next, add the vanilla extract and egg, mixing again until smooth and creamy.

Pour in the flour, baking soda and salt. Blend until all the dry ingredients are combined with the wet ingredients, making sure you scrape down the sides of the bowl.

Fold the chocolate chips into the cookie batter until they are evenly distributed.

Use a medium to large cookie scoop to make even cookie dough balls and place them on the parchment paper line cookie sheet.
Flatten the tops of the cookie dough balls. On top of the cookie dough, add half of a graham cracker broken in two.

Cut one of the large marshmallows in half and place the two halves on top.

Take another scoop of cookie dough and flatten on top of the smores center to cover all of the pieces. Repeat with the rest of the dough.
Place the cookies in the refrigerator for about 30 minutes.
While the cookies are chilling, preheat the oven to 350 degrees Fahrenheit.
Bake the cookies for 20-22 minutes until golden brown.
Remove from the oven and let cool on a wire rack for about 5 minutes. Now all that's left to do is to enjoy your homemade, gooey chocolate chip cookies!
