  • Brown sugar
  • White granulated sugar
  • Vanilla extract
  • Egg
  • All-purpose flour
  • Baking soda
  • Salt
  • Chocolate chips (we used semi-sweet chocolate chips)
  • Graham cracker sheets
  • Hershey chocolate squares (or other milk chocolate bars)
  • Marshmallows

How to Make S’mores Stuffed Cookies

Step 1. In a large bowl, combine the softened butter, brown sugar and white sugar. Blend with an electric hand mixer or a stand mixer with a paddle attachment.

Step 2. Next, add the vanilla extract and egg, mixing again until smooth and creamy.

Step 3. Pour in the flour, baking soda and salt. Blend until all the dry ingredients are combined with the wet ingredients, making sure to use a spatula to scrape down the sides of the bowl.

Step 4. Fold the chocolate chips into the cookie batter until they are evenly distributed.

Step 5. Use a medium to large cookie scoop to make even cookie dough balls and place them on the parchment paper lined baking sheet.

Step 6. Flatten the tops of the cookie dough balls. On top of the cookie dough, add half of a graham cracker broken in two.

Step 7. Cut one of the large marshmallows in half and place the two halves of the marshmallows on top.

Step 8. Top with a portion of a Hershey’s chocolate bar

Step 9. Take another scoop of cookie dough and flatten on top of the smores center to cover all of the pieces. Repeat with the rest of the dough.

Step 10. Place the cookies in the refrigerator for about 30 minutes.

Step 11. While the cookies are chilling, preheat the oven to 350 degrees Fahrenheit.

Step 12. Bake the cookies for 20-22 minutes until golden brown.

Step 13. Remove from oven and let the cookies cool on a wire rack for about 5 minutes. Now all that’s left to do is to enjoy your gooey, melty chocolate chip cookies!

Tasty Cookie Add-ins and Variations

  • Peanut butter: Add a dollop of creamy peanut butter to the center of each cookie along with the marshmallows, graham cracker pieces and chocolate. You could also just add a few peanut butter chips on top.
  • Mint chocolate chips:  Instead of regular chocolate chips, you can add a subtle minty twist by using mint chocolate chips instead.
  • Nutella: Place a small spoonful of Nutella in the center of each cookie before adding the marshmallows and graham crackers. The nutty chocolate flavor taste delicious with the gooey marshmallow center.
