Ingredients
2spicy Italian sausage links
1tbspolive oil
1medium onionchopped
1green pepperchopped
1red pepperchopped
1yellow pepperchopped
8ouncesmushroomssliced
3cupsfrozen hash browns
10eggs
1/2cupmilk
1cupshredded cheddarseparated
salt and pepper to taste
Instructions
Preheat oven to 375
Cook sausage over medium heat until cooked through. Cut into smaller pieces and set aside.

Saute onions and peppers in olive oil for three minutes.
1 medium onion, 1 green pepper, 1 red pepper, 1 yellow pepper, 1 tbsp olive oil
Add mushrooms and saute for 1-2 more minutes.
8 ounces mushrooms
Cover the bottom of a 9x13 glass baking pan with frozen hash browns.
3 cups frozen hash browns
Top with vegetables and sausage.
Whisk eggs and milk together in a bowl.
10 eggs, 1/2 cup milk
Add 3/4 cup cheese to egg mixture.
1 cup shredded cheddar
Pour over vegetables and add salt and pepper to taste.

Bake at 375 for 40-45 minutes.
Top with 1/4 cup cheese and bake until melted (about 3-5 more minutes).

Notes
You can either freeze the whole casserole or divide it into serving sizes for future last-minute breakfasts.
