Breakfast Casserole with Sausage, Eggs and Cheese

Looking for a delicious but easy breakfast recipe? Make this breakfast casserole the night before, then just pop it in the oven in the morning. Super simple and yummy!

Ingredients

  • 2 spicy Italian sausage links
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 1 green pepper chopped
  • 1 red pepper chopped
  • 1 yellow pepper chopped
  • 8 ounces mushrooms sliced
  • 3 cups frozen hash browns
  • 10 eggs
  • 1/2 cup milk
  • 1 cup shredded cheddar separated
  • salt and pepper to taste

Instructions

  • Preheat oven to 375
  • Cook sausage over medium heat until cooked through. Cut into smaller pieces and set aside.

  • Saute onions and peppers in olive oil for three minutes.
    1 medium onion, 1 green pepper, 1 red pepper, 1 yellow pepper, 1 tbsp olive oil
  • Add mushrooms and saute for 1-2 more minutes.
    8 ounces mushrooms
  • Cover the bottom of a 9x13 glass baking pan with frozen hash browns.
    3 cups frozen hash browns
  • Top with vegetables and sausage.
  • Whisk eggs and milk together in a bowl.
    10 eggs, 1/2 cup milk
  • Add 3/4 cup cheese to egg mixture.
    1 cup shredded cheddar
  • Pour over vegetables and add salt and pepper to taste.

  • Bake at 375 for 40-45 minutes.
  • Top with 1/4 cup cheese and bake until melted (about 3-5 more minutes).

  • Serve hot and enjoy!

Notes

You can either freeze the whole casserole or divide it into serving sizes for future last-minute breakfasts.
