  • 1 cup peanut butter creamy
  • 3/4 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  • Using an electric hand mixer, mix all ingredients in a large bowl until well combined.

  • Scoop the dough with a 1-inch cookie scoop and roll into balls.
  • Press a fork into each cookie dough ball in a crisscross pattern.
  • Bake for approximately 12 minutes until set at the edges.
  • Cool on the baking sheet before transferring to a wire rack to cool completely.

Notes

  • Use regular creamy peanut butter for the best texture. Natural peanut butter can make the dough too dry.
  • Do not overbake! They may look slightly soft when they come out of the oven, but they firm up as they cool.
