1 cup peanut butter creamy 3/4 cup granulated sugar 1 egg 1 teaspoon vanilla extract
Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Using an electric hand mixer, mix all ingredients in a large bowl until well combined.

Scoop the dough with a 1-inch cookie scoop and roll into balls.
Press a fork into each cookie dough ball in a crisscross pattern.

Use regular creamy peanut butter for the best texture. Natural peanut butter can make the dough too dry.
Do not overbake! They may look slightly soft when they come out of the oven, but they firm up as they cool.
