Ingredients

Instructions

  • Add cream soda to a saucepan and cook over on medium heat. Allow the soda to come to a boil.
  • After it reaches a boil, turn the heat to low and let cook until the soda is reduced by half. This should take about 12 minutes. Let the reduction cool to room temperature, then place it in a bowl for storage.
  • Pour the butterscotch chips out and chop them with a sharp knife (or use a food processor). Place them in a small bowl or on some parchment paper for later.
  • Next, place the softened butter in a large mixing bowl and beat with your electric mixer until light and fluffy. That should take about 2-3 minutes.
  • Add half of the powdered sugar, vanilla extract, reduced cream soda and heavy whipping cream.
  • Mix butter mixture on low speed while adding the remaining powdered sugar. Continue for 1-2 minutes or until mixture is smooth and creamy.
  • Use a spatula to fold in the half chopped butterscotch chips.
  • Place a dry cutting board on a flat surface. Using a rubber spatula or an offset spatula, spread some of the butterbeer buttercream frosting on the cutting board. Start from the top of the board, stopping about 1/2 inch from the edges. Otherwise it’ll be hard to handle the board.
  • Sprinkle your remaining butterscotch chips over the frosting.
  • Generously sprinkle Harry Potter theme sprinkles over the butter beer frosting.
  • Place the cookies, crackers or other snacks of your choice on the open spaces of the board. Be sure to leave a little room around the edge so the snacks don’t fall off.
  • Serve with crackers or cookies and enjoy!

Notes

  • For a little extra decadence, try adding a drizzle of something sweet over the top of the prepared board. For this frosting board, caramel or butterscotch sauce is a perfect fit.
