Candy Corn Rice Krispie Treats

These Candy Corn Rice Krispie Treats take everyone's favorite cereal treats and gives them a fun candy corn twist for fall!

Ingredients

For the yellow layer

  • 6 cups mini marshmallows
  • 4 tbsp unsalted butter
  • 1/3 tsp yellow food coloring
  • 1/3 tsp almond extract
  • 4 1/2 cups Rice Krispies

For the orange layer

  • 2 cups mini marshmallows
  • 1 tbsp unsalted butter
  • 1/3 tsp orange food coloring
  • 1/4 tsp almond extract
  • 1 cup Rice Krispies

For the white layer

  • 1 cup mini marshmallows
  • 1/2 tbsp unsalted butter
  • 1/3 tsp white food coloring
  • 1/8 tsp almond extract
  • 1/2 cup Rice Krispies

Instructions

  • Spray your baking pan with nonstick cooking spray and set it aside.
  • In a large microwave-safe bowl, combine the mini marshmallows and butter for the yellow layer. Microwave for about two minutes, stirring every 30 seconds, until mixture is almost completely melted. (You can cook over medium low heat in a large saucepan, if you prefer)
    6 cups mini marshmallows, 4 tbsp unsalted butter
  • Remove the marshmallow mixture from the microwave and stir with a greased spatula or spoon. Add the yellow coloring and continue stirring until there are no color streaks remaining.
    1/3 tsp yellow food coloring
  • Add the almond extract and stir until well blended.
    1/3 tsp almond extract
  • Fold in the rice cereal until it’s well coated.
    4 1/2 cups Rice Krispies
  • Pour the mixture into the prepared pan and push it to the outer edge of the pan. Even out the cereal mixture with your hands, until it makes a level yellow ring all the way around, with about a 4-inch circle left in the middle.
  • Use a flat-bottomed measuring cup or glass to press up against the inside edges of the circle and around the top to make it smooth.
  • Repeat the same process with the mini marshmallows, butter, cereal, almond extract, and orange food coloring to make the orange layer. Note that the ingredient amounts are different for each layer.
    2 cups mini marshmallows, 1 tbsp unsalted butter, 1/3 tsp orange food coloring, 1/4 tsp almond extract, 1 cup Rice Krispies
  • Pour the orange mixture into the pan and shape it into the same type of circle as the yellow layer, leaving about a 1-inch hole left in the middle. Make sure that the second layer is the same height as the first.
  • Repeat the same process with the mini marshmallows, butter, cereal, and almond extract, and white food coloring for the white layer.
    1 cup mini marshmallows, 1/2 tbsp unsalted butter, 1/3 tsp white food coloring, 1/8 tsp almond extract, 1/2 cup Rice Krispies
  • Add the white mixture to the remaining circle area in the pan and pack it tightly, making sure it’s level with the other layers.
  • Cover and let sit for at least 4 hours. Slice it like a pie, serve, and enjoy!

Notes

  • Don’t have almond extract? You can substitute vanilla extract or leave it out all together. It’s not essential, but it helps the treats taste more like real candy corn.
  • Spray a little non-stick spray on your hands when shaping each layer. It'll keep the marshmallow mixture from sticking.
