Chocolate Bear Paw Cookies

These adorable Chocolate Bear Paw Cookies are rich brownie-like cookies that are just as delicious as they are cute!

TO MAKE THE COOKIES

  • In a large bowl, add the chocolate cake mix and the baking powder.
    15 ounce chocolate fudge cake mix, 1 tablespoon baking powder
  • Add melted butter and eggs.
    2 eggs, 1/3 cup unsalted butter
  • Using an electric mixer, beat on low until a soft dough forms. You can mix everything with a rubber spatula instead, if you don’t have a mixer.
  • Next, fold in the chopped walnuts.
    ½ cup walnuts
  • Cover the bowl with plastic wrap and chill for at least 30 minutes.
  • Use a small cookie scoop or a spoon to drop 1 ½ tablespoon sized balls of dough onto the lined baking sheet. Make sure to space them a few inches apart to leave room for the cookies to spread.
  • Bake for 8-10 minutes, or until the tops are set and the cookies are done.
  • Allow the cookies to cool in the pan for 3 minutes before transferring to a wire cooling rack to cool completely.

TO MAKE THE PAW

  • Once the chocolate cookies have cooled, place unwrapped caramels in a microwave safe bowl.
    10.8 oz Werther’s Originals chewy caramels
  • Add heavy cream and melt on high in 30 second increments.
    3 tablespoons heavy whipping cream
  • Stir frequently in between microwaving. Continue until the caramel is silky smooth and there are no lumps.
  • Let cool for a few minutes before dropping half a tablespoon on top of each cookie.
  • Add a chocolate wafer for the pad of the paw and 3 semisweet chocolate chips on top of each cookie to make bear claws.

  • Continue until all the cookies are decorated.

Notes

  • To prevent a flat cookie, you want to make sure that you give the dough time to chill until it’s nice and firm.
  • Want to save time later? The cookie dough can be made up to two days in advance. Just cover with plastic wrap and refrigerate.
