Crack Dip

This easy Crack Dip is loaded with crispy bacon, sharp cheddar, tangy ranch, and crunchy dill pickles for a cool, creamy appetizer that is absolutely impossible to stop eating. Mix it up in just 20 minutes and let your fridge do the rest!

Ingredients

  • 8 ounces cream cheese softened
  • 1 cup sour cream
  • 1 ounce ranch seasoning
  • 1 ½ cups sharp cheddar shredded (divided)
  • 6 bacon strips cooked and crumbled (divided)
  • ¼ cup finely diced pickles
  • 3 green onions thinly sliced (divided)

Instructions

  • Place the softened cream cheese in a large mixing bowl. Beat it with an electric mixer until completely smooth.

  • Add the sour cream and continue mixing until the two are fully combined and creamy.

  • Sprinkle in the ranch seasoning. Stir until it is blended evenly throughout the cream cheese mixture.

  • Set aside a small amount of the shredded cheddar cheese, crumbled bacon, and green onions for garnish. Add the remaining cheese, bacon, diced pickles, and sliced green onions to the cream cheese mixture.

  • Mix the ingredients until well blended.
  • Spoon the dip into a serving bowl and garnish with the reserved toppings. Cover and refrigerate for at least one hour. Serve cold with crackers, chips, pretzels, or fresh vegetables

Notes

  • In the refrigerator: You can keep your leftover dip in an airtight container for up to four days. Stir it gently before serving again.
  • In the freezer: Freezing is not recommended. Cream cheese and sour cream can separate after thawing, leaving the dip watery or grainy.
  • Use full fat dairy products. Full fat cream cheese and sour cream give the dip a thicker consistency and a richer, smoother taste.
  • Shred the cheddar yourself. Packaged shredded cheddar has a coating that can make the texture slightly dry. Freshly grated cheese blends into the dip more easily.
  • Dice the pickles very finely. Small pieces spread the tangy flavor throughout the dip instead of creating a few large, overpowering bites.
  • Taste before adding salt. Bacon, ranch seasoning, pickles, and cheddar are already salty, so additional salt is rarely necessary.
  • Use thick cut bacon if available. It makes substantial crumbles that are easier to taste among the other creamy ingredients.
  • Keep it cold during long gatherings. Place the serving bowl over a larger bowl of ice if the dip will remain out for an extended period.
