Ingredients

  • 1.5 lb carrots
  • 3 tbsp butter
  • ¼ cup maple syrup
  • 2 tbsp brown sugar
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  • Preheat the oven to 350F and cover a rimmed baking sheet with aluminum foil paper.
  • Trim off the green tops, scrub the carrots clean and peel them. Slice your fresh carrots lengthwise. Then, arrange them on the prepared baking sheet in a single layer.
    1.5 lb carrots
  • Melt butter in the microwave for 30-60 seconds, then mix it with the sweet maple syrup and brown sugar. Season with salt and pepper.
3 tbsp butter, ¼ cup maple syrup, 2 tbsp brown sugar, ½ tsp salt, ¼ tsp black pepper
  • Using a pastry brush, coat the carrots with the maple syrup and brown sugar mixture. Flip them to make sure the carrots are coated well on all sides.
  • Bake carrots for 15 to 20 minutes or until fork tender with slightly crispy edges.
  • Once the carrots are roasted to perfection, remove them from the oven and transfer to a serving dish.
  • Garnish your cooked carrots with fresh herbs. Serve them as a delicious side dish alongside your main course. Enjoy!

Notes

When cutting the carrots, it's best to get them as close to the same size and thickness as possible. They'll cook more evenly and it'll keep some pieces from becoming overly soft while others are undercooked.
For an easier cleanup, be sure to line the pan with foil or parchment paper before adding the carrots. This will help prevent the glaze from sticking to the pan.
Be sure the carrots are placed in a single layer so that the syrup mixture slightly caramelizes on all sides.
