Use1.5 Tbsp cookie scoop to scoop cookie balls onto the lined baking sheet.
Spray the back of a large spoon with non-stick cooking spray. Use it to flatten the cookies. You may need to spray the spoon several times during this process.
If you want to add a little extra sweetness, sprinkle the cookies lightly with sugar. Place baking sheet in the oven.
3 Tbsp granulated sugar
Bake 9-12 minutes. Cookies will be soft and springy when ready.
Serve fresh from the oven or let cool on a cooling rack for later.
Notes
Because the cookie dough is so sticky, it's best to use a cookie scoop when scooping the mixture onto the baking sheet.
Be sure to buy pumpkin puree (the same as canned pumpkin) and NOT pumpkin pie mix.
