Notes
Make ahead: Fill a piping bag with the finished filling and refrigerate or freeze it separately from the shells. If frozen, thaw in the refrigerator before piping, then fill the shells shortly before serving to keep them crispy.
Don’t over whip the cream: Stop beating as soon as you have stiff peaks. Overwhipping can make the cream grainy and even turn it into butter.
Fold gently: Use a flexible spatula and scoop slowly from the bottom of the bowl. Quick stirring deflates the whipped cream and you’ll lose that light, fluffy texture.
Use a large piping tip: A wide, open piping tip works best because smaller or partially closed tips tend to clog up with sprinkles.
Keep chilled: Serve these cold. The firm, cool filling is such a nice contrast to that crisp shell.
