Galaxy Ice Cream

This no-churn Galaxy Ice Cream is easy, fun and absolutely delicious! It's the perfect treat for birthdays, space parties, or just a cool and refreshing summer dessert.

  • 4 cups heavy whipping cream
  • 28 ounces sweetened condensed milk 2 cans
  • 1 tablespoon vanilla extract
  • 8 ounces strawberry frosting
  • Food coloring gel - black, pink, teal and purple
  • Galaxy sprinkles

Instructions

  • Start by whipping the heavy cream until stiff peaks form, then add sweetened condensed milk.

  • Add vanilla extract and mix well.

  • Divide the mixture into four separate bowls. Stir the strawberry frosting into one of them.

  • Stir a few extra drops of pink food coloring to the bowl with the frosting. I like to get it started with a toothpick or skewer, then use a spoon to mix it until the color is completely blended.

  • Now do the same with the remaining colors, adding black, purple and teal to the remaining bowls.

  • Add spoonfuls of the ice cream mixture to a loaf pan or casserole dish. I've used both but the casserole dish definitely looks prettier!
  • Keep adding the mixture, spoonful by spoonful, until you've filled the pan.
  • Swirl the colors together, being careful not to overswirl (is that even a word?). The colors will blend together more as the ice cream freezes.
  • Top with sprinkles for the finishing touch.

  • Freeze for at least six hours but overnight for best results. Once it's set, just serve and enjoy!

Notes

  • Because of the frosting, this ice cream is a little softer than usual. We love it that way but you can leave out the frosting if you like (though the frosting does give the ice cream a delicious strawberry flavor).
  • The black ice cream can get a little lost among the other colors. If you want it to stand out more, just use a larger portion of the ice cream mix with the black food coloring.
  • Use a long skewer or butter knife to gently swirl. Do not overmix or the colors will look muddy.
  • Tap the loaf pan on the counter a few times to smooth out the top before freezing.
