Ingredients

Crust:

  • 1 3/4 cup graham cracker crumbs 2 sleeves
  • 2 tablespoons granulated sugar
  • ¼ teaspoon salt optional to balance out sweetness
  • ½ cup unsalted butter melted

Filling:

  • 24 ounces full fat cream cheese softened to room temperature
  • 14 ounces sweetened condensed milk 1 can
  • ¾ cup key lime juice or regular lime juice
  • 1 tablespoon fresh lime zest
  • 8 ounce Cool Whip thawed

Toppings:

  • Whipped cream
  • Lime zest

Instructions

For The Crust

  • Spray your 10-inch pie plate with cooking spray and set aside.
  • Add the graham crackers to the food processor. You can also use a high speed blender and pulse until you get fine crumbs.

  • Pour the crumbs into a small mixing bowl and add the sugar and salt. Add the melted butter and mix until well combined.

  • Press the crumb mixture firmly into the bottom of the prepared pie pan. Place the crust in the freezer for at least 10 minutes to set while making the filling.

For The Filling

  • Add cream cheese to a large mixing bowl. Using a hand mixer on medium high speed, beat the cream cheese until smooth and creamy.

  • Next, pour in the sweetened condensed milk, lime juice, and zest. Beat until well combined.

  • Using a rubber spatula, gently fold in the thawed Cool Whip.

  • Take the pie crust out of the freezer. Pour the filling into the crust, then spread evenly with an icing spatula. Go back and forth, lightly pressing down to remove any air pockets.
  • Place the pie in the fridge for at least 4 hours, or overnight, to allow the pie to set. It will also give the flavors time to blend together.
  • Before serving, pipe with whipped cream and garnish with freshly grated zest. Slice and enjoy.

Notes

If you want to try a different kind of crust, Golden Oreos, Nilla Wafers, shortbread cookies, or gingersnap cookies are all great options. You can also just add the filling to a store-bought, pre-made pie crust.
