Ritz Cracker Cookies

These easy Ritz Cracker Cookies are the ultimate no-bake holiday treat—creamy peanut butter, buttery crackers, and sweet white chocolate in every bite!

  • 3/4 cup peanut butter
  • 48 Ritz crackers
  • 1/2 tablespoon vegetable oil
  • 1 3/4 cups chocolate you can use white, dark or a mix of both
  • 1/4 cup red candy melts
  • 1/4 cup green candy melts
  • Christmas sprinkles

Instructions

  • Put 1/2 tablespoon of peanut butter between two Ritz crackers and continue until you have 24 cookie "sandwiches". You could also add the peanut butter to a piping bag and pipe it on to a cracker, then place another cracker on top.

  • Use a knife to scrape any excess peanut butter off the sides
  • Add vegetable oil to the dark chocolate chips and melt over stove with a double boiler (if you don't have one, see the alternate instructions below).
    1 3/4 cups chocolate, 1/2 tablespoon vegetable oil
  • Use a fork to dunk cookies in the melted chocolate. Tap the fork on the side of the bowl to remove any excess chocolate, then place on wax paper or parchment paper.
  • Repeat the same process with the white chocolate.

  • Melt red candy melts in microwave or over stove and drizzle over cookies. Repeat with green melts.
    1/4 cup red candy melts, 1/4 cup green candy melts
  • Immediately top your peanut butter cookies with white, red and green sprinkles before the chocolate hardens.

  • Let the chocolate cool and set before serving. Enjoy!

Notes

Don't have a double boiler? Add approximately one inch of water to a saucepan, then place a bowl on top of it.  Pour your chips and vegetable oil into the bowl and you’ve got your own version of a double boiler.
