Use your favorite pancakes recipe to make the batter. Ladle it into a large skillet or onto a griddle. Cook until bubbles form around the edges on the first side. Flip and cook the other side until golden brown.
1 pancake
Place the cooked pancakes on individual plates. Make sure you leave a little room at bottom to add Santa's beard.
Cut the tops off about 8 strawberries (depending on the size) and slice in half lengthwise. You can use more or less if necessary. Arrange them above the pancake in the shape of Santa's hat.
9 strawberries
Cut the ends off two blackberries and place them slightly above the center of the pancake for Santa's eyes. You can use blueberries if you'd like.

Spray whipped cream between the top of the pancake and the strawberries to make the rim of the Santa hat. Add another dot at the tip of the hat.
3/4 cup whipped cream
Continuing adding the whipped cream to make Santa's beard. Add the whipped cream around the edges of each side Santa face until it connects to the bottom rim of the hat.
Cut off the tip of a strawberry and use it to make Santa’s nose. Try to find one that’s more rounded than pointy.
Serve warm and enjoy!
Notes
We made this portion pretty large and the kids shared it. You can also make smaller pancakes and use fewer berries and less whipped cream.
You can substitute blueberries for the eyes or raspberries for the hat.
For a healthier version, use sliced bananas in place of the whipped cream.
