These Strawberry Cheesecake Bites are crispy, creamy, and topped with fresh berries for the cutest (and most delicious) little party dessert. They come together in just minutes and you'll find it impossible to eat just one!
In a large bowl, beat the heavy whipping cream with a handheld mixer on medium-high speed until stiff peaks form. Set aside.
¾ cup heavy whipping cream
Add the strawberries to a food processor and pulse until they turn into a smooth puree.
½ cup fresh strawberries
In a separate bowl, beat the softened cream cheese and sugar together, then mix in the strawberry puree, vanilla extract, and lemon juice until smooth.

Fold the whipped cream into the cream cheese mixture until fully combined, with no white streaks left.
Scoop the filling into a piping bag fitted with your favorite tip, then pipe it into all 40 mini phyllo shells.

Top each one with a halved strawberry, then refrigerate the until ready to serve.

Dry the berries well: After washing the strawberries, pat them completely dry. Extra water can loosen the filling and make it harder to pipe.
Scrape the mixing bowl: Stop the mixer once or twice and scrape along the bottom and sides to catch any hidden lumps of cream cheese.
Don’t under blend: A well-blended filling will be thicker and easier to pipe than one that has not been mixed enough.
Pipe from the center: Hold the tip just inside the phyllo shell and pipe from the center outward. This fills the bottom of the shell without leaving an empty pocket.
Add the garnish near serving time: Cut strawberries release juice as they sit.
Fridge: Store leftover bites in an airtight container in the fridge for up to 1 to 2 days for the best texture. The phyllo shells soften the longer they sit, so plan to enjoy these within a day or two of making them.
Freezer: Freeze the filled bites without the strawberry garnish in a single layer, then transfer them to a freezer bag or airtight container once solid. Thaw frozen bites in the fridge for 20 to 30 minutes before adding the strawberry garnish and serving.
